The
Italcook cookery school, created by a project involving
Jesi town council and the
Slow Food organisation, is a prestigious institute offering professional training and refresher courses for chefs, aspiring chefs and other professionals in the culinary sector.
Italcook has organised a
one week course in
Marchigiana cooking especially for the students of
abbeySCHOOL CiaoItaly. The course is reserved for a maximum of 20 participants, and will be held from Monday to Friday, from 9 am to 2 pm, for a total of
25 hours of lessons. After a brief introduction to cooking terminology, the students will be taken to the school's learning kitchen to be taught the basic techniques of traditional Marchigiana cooking: handmade pasta; ragout sauces made with meat or fish, cooked according to Mediterranean tradition; and sweets and cakes made with typical local produce. The lessons, which include practical sessions in the kitchen, will be held in Italian with English translations.
